Method:
  • For the parsnip mash, use the same amount of potatoes as parsnips , so if you are with more or fewer people you can simply use those quantities.
  • Peel and cut the potatoes into quarters, peel the parsnips and cut the pieces into pieces about the same size as the potatoes .
  • Put them in the pan at the same time so that they are just covered with water and add salt to taste, about two large teaspoons. Let it cook until everything is well done but not overcooked otherwise it will become a mush.
  • Drain the boiled potatoes and parsnips well and steam them a little more so that any remaining water evaporates.
  • Mash everything together, add some butter to taste until smooth.
  • parsnip mash is of course a bit sweet in taste so to give your dish a bit of spice, cut about 4 chives (spring onions) into thin rings and stir them through the mash. Your preparation will then get a bite and a bit of spice.
  • Then stir in the fried bacon.
  • If you like it spicy, you can also stir in a small chopped Spanish pepper without seeds.
  • You can of course put it in an oven dish afterwards and gratinate it with young cheese, but that is of course not necessary.
  • Serve with smoked sausage and/or bacon and enjoy...
