Yacon or Apple Root breeding tubers (Smallanthus sonchifolius)
Yacon is a root vegetable known for its juicy, slightly sweet flavor and versatility. The tubers are rich in inulin, a natural sugar that is suitable for people who want to watch their blood sugar levels. Yacon can be eaten raw or processed in salads, smoothies, or cooked dishes. A healthy and unique addition to any kitchen!
Cultivation
It is a beautiful plant that can grow up to 2 meters high. The bright yellow flowers resemble those of a sunflower, because they are related to each other.
To guarantee an optimal harvest, it is strongly recommended to plant the breeding tubers indoors at the end of March in a pot filled with potting soil (water!). It is best to place 1 tuber per pot (p9). Place the pot in a light place, room temperature is sufficient. After a few weeks, the first plant will be visible. As soon as there is no more night frost (mid-May), you can plant them outside. Planting distance: 50 cm x 50 cm. Harvesting takes place from the end of September to the beginning of November as soon as the plant starts to decline. The longer you wait, the thicker the tubers.
Do you want to store breeding tubers for cultivation the following year? Store them in a cool, dark and airy place in a pot filled with potting soil (do not water!). The potting soil ensures that the tubers do not dry out.
You can also plant the tubers directly outside in the open ground (mid-May). But this will result in a lower yield due to the shortened growing season.
