Saccharomyces Cerevisiae var. bayanus
Grain yeast that ensures neutral fermentation, with high sulphite resistance (up to 25-30 mg free SO2 per litre). Ensures regular and far-reaching fermentation, also with stalled wines, refermentation and sparkling wines.
- Alcohol tolerance 17% vol.
- Temperature range: 15-30°C
- Dosage: 2 g/10 litres under normal conditions; 4 g/10 litres for restarting, refermentation, difficult conditions.
