The 'Kardoen' looks nice in the vegetable garden because of the artichoke-like flowers. The plant can grow up to one and a half meters. By bleaching the leaf stalks during cultivation, they are also edible. One bag is for approximately 10m2, and the planting distance is 80x60 cm.
Cardoon is very similar to artichoke, the plants are closely related. In contrast to artichoke, you grow cardoon mainly for the edible leaves (if bleached – see below), and less quickly for the flowers. Cardoon often becomes a large plant, up to one and a half meters high, with deeply incised leaves, gray-green in color. The plant also produces artichoke-like flowers. The decorative properties of the plant make the plant very popular with vegetable gardeners. Cardoon is therefore a heat-loving plant – the plant originally comes from the Mediterranean region. Therefore, preferably give cardoon a sheltered spot in your vegetable garden. The plant produces a lot of leaves in a short time and therefore needs fertile, moist soil. Add some extra compost or well-rotted manure before planting. Also loosen the soil well before planting. During the growth period you could add some fertilizer if necessary. In warmer areas, cardoon will easily be able to overwinter, in the Dutch climate the plant can freeze to death. By covering the plant/root during severe frost, the plant has a greater chance of survival. The leaf stalks of cardoon are edible, after cooking. These stalks are usually bleached, to reduce the fibrousness. Sow cardoon in the open ground in May. Sow a number of seeds per spot, leave the strongest plant and remove the rest. Pre-sowing in a pot, and then planting out is also possible. Start bleaching the plant at the end of August: make sure the leaves are dry when you tie the leaves together, otherwise the leaves will easily become contaminated. Wrap the leaves with a piece of rope, and prevent light from reaching the leaves. Originally, jute was always used for this, another air-permeable material that blocks light is also possible.

Saving seeds
Saving seeds
Store seeds in a cool, dry and dark place, such as a sealed box in a cupboard. Pay attention to the expiration date on the packaging and use them before that time. If the packaging has been opened, make sure it is sealed properly and check the germination capacity before use.
You can easily test the germination capacity of seeds with a germination test :
- Place a few seeds (for example 10) on a damp piece of kitchen paper.
- Fold the paper towel closed and place it in a plastic bag or place it in a sealed container.
- Place it in a warm place, such as on the windowsill.
- After a few days, check to see if the seeds have started to germinate.
