Helianthus tuberosus ‘Wit’ is a vigorous, hardy Jerusalem artichoke known for its height (2-3 m) and rich yield of edible tubers. This variety produces large, elongated tubers with a slightly sweet, nutty flavor. Above ground, the plant grows to an impressive height and blooms in late summer with bright yellow flowers that attract many bees and other pollinators. Harvest in autumn or winter once the plant has died back. Leave a few tubers in the ground so the plant will sprout again the following year.
