Sorghum flour is a soft, fine flour that is naturally gluten-free. It is made from sorghum, an ancient grain related to millet. Sorghum flour provides a better structure to gluten-free recipes than many other gluten-free flours. It is similar to buckwheat flour in use and properties, and is suitable for a wide variety of recipes.
